Nouveau Irish Cuisine Means Classic Gaelic Favorites Get An Update

A visit to Ireland means being able to enjoy cuisine prepared with the freshest ingredients possible. Irish Chefs have set the standard for farm to table food and managed a delightful update of traditional Gaelic favorites. They've established a modern approach which emphasizes fresh, locally sourced ingredients prepared and plated in innovative ways. Even some pub food has been updated with improvements to steak and stout pie, stout braised lamb shanks and shepherd's pie. These new ideas and methods can easily be applied to food preparation and service anywhere in the world.

The basic concept is a contemporary approach to traditional dishes like Irish stew and colcannon, which incorporates modern culinary trends and global influences. Irish chefs prioritize using locally grown produce, fresh catch seafood, and high-quality meats. They have embraced modern techniques like sous vide, molecular gastronomy, and other innovative methods to elevate traditional dishes. Vegan dishes have also become more available. 

Irish stew, boxty, and colcannon are experiencing a revival thanks to modern twists. While Irish stew is a classic, modern versions incorporate different cuts of meat, exotic vegetables, and unusual herbs and spices. Irish Chefs are creating new and exciting seafood dishes using fresh, locally caught fish and shellfish, prepared with international culinary influences in mind. Traditional Colcannon is a combination of mashed potatoes and kale or cabbage. It's been elevated with the addition of cream, butter, and other flavorful ingredients. Beloved Irish soda bread, and other traditional breads, are being modernized with unique flours, grains, and flavorings.

If you can fit anything else in your tummy after a typically hearty Irish meal, you're in for a treat. Traditional desserts are being reimagined with new flavors and presentations. Current favorites include Irish soda bread cookies, ginger snaps, tea and apple cake, Mum's apple pie, pound and dairy cake, bannock (similar in taste to a scone), potato cake, sweet bread, double chocolate cream cupcakes and Dublin drop cake. Just like the innovations to main course dishes, desserts have become more tasteful and less weighty staying in tune with worldwide food trends
